Job Description
Cavallino Inc. is looking for a highly organized and experienced Commissary Manager to oversee and manage the overall operations of the commissary. The successful candidate will be responsible for ensuring efficient production and storage operations, maintaining food quality and safety standards, managing deliveries, controlling operational costs, and leading the commissary team toward operational excellence. This role requires strong leadership, operational management, and logistics coordination skills within a food service or commissary environment.
Key Responsibilities
Commissary Operations Management
- Oversee daily commissary operations, including production, storage, inventory, and logistics
- Ensure proper handling, storage, and distribution of commissary products
- Monitor food quality and ensure compliance with food safety standards
- Supervise delivery schedules and ensure timely distribution of products
- Lead, train, and develop commissary staff on food safety and proper equipment handling
- Implement operational improvements to increase efficiency and productivity
- Raw Materials Management
- Assist in sourcing and maintaining reliable suppliers for core products
- Monitor quality inspection of incoming raw materials
- Ensure receiving procedures comply with company and food safety standards
Profitability Management
- Monitor and evaluate commissary financial performance
- Analyze operational costs and major expense contributors
- Recommend strategies to improve profitability and operational efficiency
- Provide guidance and corrective action plans to address performance variances
Qualifications
- Minimum of 5 years of managerial experience in commissary or food production operations
- Graduate of any course
- Certification in HACCP and GMP is an advantage
- Strong leadership, organizational, and problem-solving skills
- Knowledgeable in commissary operations, logistics, inventory, and food safety standards
- Proficient in MS Word, Excel, PowerPoint, and Internet applications
- Willing to travel when required
