Ideal Candidate
A professional Grill Cook with strong protein-cooking skills, attention to detail, a sense of urgency, and pride in producing consistently high-quality food. The ideal candidate understands that the grill station requires precision, timing, temperature control, and communication to deliver excellent plates during every service. This is a seasonal position with an expected duration of six months or less.
Compensation: $23.00 - $25.00 per hour
Position Summary
The Gourmet Grill Cook is responsible for preparing and executing high-quality grilled meats, seafood, vegetables, and specialty menu items according to the restaurant's recipes, quality standards, and presentation specifications. Grill Cook must have a strong knowledge of cooking temperatures, grill techniques, timing, and seasoning while maintaining consistency during high-volume service.
Key Responsibilities:
- Set up and maintain the grill station with proper set up before service.
- Prepare and grill steaks, burgers, chicken, fish, seafood, vegetables, and other menu items.
- Maintain accurate cooking temperatures for all proteins.
- Season and prepare products according to standardized recipes and chef specifications.
- Monitor grill temperature and cooking times throughout service.
- Read tickets accurately and prioritize orders according to service needs.
- Coordinate timing with sauté, pantry, fryer, and expo stations.
- Ensure all grilled items are properly rested, sliced, plated, and presented.
- Taste and evaluate sauces, marinades, and accompaniments when applicable.
- Maintain consistent portion sizes, cooking standards, and presentation.
- Communicate immediately with the chef or supervisor regarding product shortages, quality issues, or potential 86 items.
- Properly label, date, store, and rotate products using FIFO
- Maintain a clean, organized, and fully stocked grill station throughout service.
- Follow all food safety, sanitation, and temperature-control procedures.
- Assist with prep, banquets, specials, and other kitchen duties as needed.
- Minimize food waste through proper portion control and product utilization.
- Assist other cooks when the grill station is under control.
Required Culinary Skills:
- Strong understanding of grilling and high-heat cooking techniques.
- Knowledge of steak and protein temperatures and proper doneness.
- Ability to manage multiple proteins and tickets simultaneously.
- Strong knife skills and basic meat/fish preparation knowledge.
- Understanding seasoning, marinades, rubs, sauces, and flavor balance.
- Ability to maintain consistent quality during high-volume service.
- Ability to follow recipes and plating specifications accurately.
Performance Expectations:
- Quality: Every grilled item is properly cooked, seasoned, hot, and presented according to standards.
- Consistency: Maintain the same cooking temperature, portion, flavor, and presentation every time.
- Speed: Maintain appropriate ticket times without sacrificing food quality.
- Station Ownership: Keep the grill clean, organized, stocked, and ready for service.
- Communication: Communicate clearly with the chef, expo, and other stations.
- Food Safety: Follow proper cooking temperatures, cross-contamination prevention, sanitation, and food storage procedures.
- Teamwork: Support the kitchen team and help maintain smooth service.
Physical Requirements
- Ability to stand for extended periods.
- Ability to work around high heat and grills.
- Ability to lift and carry kitchen supplies.
- Ability to safely handle knives, hot pans, grills, and other cooking equipment.
- Ability to work efficiently in a fast-paced, high-volume kitchen.
Certificates/Licenses:
- SERV Safe Certified (Food handler & Alcohol) or RBS.
